In the cellar, gravity processing.
Pressing with membrane press-machine;
Vinification: in thermo-regulated vats, émail vats and in oak barrels; aging from 24 months to 7 years for each Champagne ; specific dosage adapted to each cuvée and tirage.
Our oaks,
more than a hundred years old, from the Treslon region, are selected in coordination with our cooper “la Tonnellerie de Champagne” for production of our barrels.
